Here is a little known method that can be used to create a soffit that follows the falls of the gable roof or similar.
Select the original soffit and edit the sketch.
Use a roof by extrusion draw sketch lines at the gable end specify depth of roof equal to the overhang.
Change the slope angle of the roof.
Use sloped edges or a slope arrow on a roof to create sloped roof elements.
